Most of the dry fishes available in the market are the reprocessed fish from fish markets. The fish once caught will be immediately refrigerated and will be sold in market for minimum 4 days as fish. If it is not sold, it will be dried and sold as dried fish. The thing is that the unsold or the waste material of fish markets will be dried and sold as dry fishes. This is the common practice. 

What is Traditional Preservation? For traditional preservation, the fish which is to be preserved shouldn't be refrigerated. The fish once caught will be immediately put into salt and buried in the sea sand for 3 days. This is the process which converts the fish into a preserved fish. In coastal regions of Rameswaram, the above said process is called "Paadam" which means “Preservation” and the product obtained in this process is called "Pattarai Fish" which means “Preserved Fish”. After 3 days, it will be taken out from the sand and will be coated with turmeric powder which acts as the Antifungal/Antimicrobial agent. This type of preservation is done for fishes having huge flesh and more blood which makes the typical drying process more challenging.The unsold refrigerated fish or the wastes of fish market can also be processed in the same manner. But it will feel harder, just like a piece of wood while cutting. All dry fishes/preserved fishes developed by us are made from Fresh Fish. We procure as fresh fish, dry/preserve them, pack them and deliver to your doorsteps. We are writing this, because we got some negative reviews from our beloved customers because of some misunderstandings. We make it clear, this is a Traditionally Preserved Fish and not a dry fish. The image displayed in the product section is a full sized “Traditionally Preserved” which weight appx 1.5 to 2.5 kgs. Once we receive your order, we will cut the whole fish, weigh them and then coat them again with turmeric powder and will sent them. So the product received will not be exactly as shown

Anchovy | Nethili | நெத்திலி is one of the most loved and easy to cook dry fish.
These dry fishes are prepared from freshly catched fishes from the Rameswaram Islands of India.The fishes caught here are of very unique taste since this is the place where two oceans, the Indian Ocean and Bay of Bengal meets. The freshly caught fishes are coated with salt and dried traditionally in the sea shores. The extreme heat and strong breeze from the sea shores makes the dry process unique which adds natural aroma to our products. Since we are not adding any preservatives other than salt, the products will not last longer unless it is stored in the refrigerator along the air tight container provided along with the product.
