Organic Express Appemidi Pickle is a traditional wild-grown, homemade pickle of the Malnad region of Karnataka. Appemidi is a typical long sleek tender mango found only in the wilds of the Western Ghats of Karnataka. This tender mango is collected when they are young 30 to 40 days after blooming upon harvesting, the tender mangoes are dipped in natural desi salt, the moisture in the tender mango slowly drowns out by salt and the salt syrup is formed. After 45 days, salt syrup and tender mangos are separated. The Traditional Pickle paste is made with lots of herbs, Spices and masalas by hand grinding on a stone grinder. The salt syrup is heated at a low temperature for a long time to remove the moisture and the paste is mixed with the syrup to make pickle masala. The tender mangoes are dipped in the masala and kept in a Chinese clay jar in a cold dark room for the probiotics to grow and the Pickle to settle. Once the pickle is settled it is packed into the consumer’s glass bottle packing and released to the market as Appemidi Pickle.
